A Very Foggy November 2nd

Woke up this morning to a very thick fog.

I could see close up and our dock and boat but beyond that nothing.  I had just put out sunflower seeds for the birds when I grabbed the camera. (Note when I post photos they will enlarge for better viewing-just click on them)

Yesterday being November first I packed up the Halloween luminaries  and replaced them with the Thanksgiving set. I like these-several different designs-I found both sets on Amazon

I had a taste for cut out cookies the other day, so grabbed the cutters with leaf shapes, turkey, and pumpkin.   This acid reflux issue has really effected what I can eat-including no butter, or granular sugars.  So I searched online for ideas, and found light olive oil for baking or coconut oil instead of butter. Instead of sugars- maple syrup, molasses, honey or sorghum are easier for acid reflux.  I went with honey and olive oil and my gluten free flour blend. Adjustments needed to be made for the dry ingredients that I found online.

They baked up well-needed to lower the oven temperature as well-and cookies need to cool on the pan before taking the cookies off to finish cooling down.  I would like to frost these so may try a keto powdered "sugar" I was hoping to share a photo but this camera is difficult to take indoor photos-6 shots and no luck

I finally got around to changing some of the clocks do to the time change-which I totally forgot about til Janice mentioned it in comments-thank you

   Happy new week.

  2. Yeah hubby just finished changing the clocks this afternoon... not a fun chore.. Love that fog Kathy.. so beautiful... I loved seeing it when we lived in AR... We've been having cool nights and warm days... no more rain.. Hubby and i are having a Game Night tonight with our Seek and Find Games... That calls for Pizza Rolls and some Onion dip and Ruffles... lol I'm always so sorry to hear you have to be so strict with your acid reflux... and we thank our lucky stars that Omeprazole still works for hubby... may not always but for now... good.. Daughter has had a flare up of her gluten issues so no she wants me to make her favorite peanutbutter cookie with the candy kiss on top gluten free AND her favorite birthday cake a Black Magic Chocolate cake that has coffee in it gluten free... oooh boy... I' m sure i can figure out how to make it .. it may just not taste good... Hugs! deb

  3. Yeah well I reminded everyone to change their clocks, but did not do my own. LOL I only did my car one when I went to drive and see my mom yesterday. Bob did the rest last night. You had some pretty heavy fog. Glad I did not have to drive in that. Janice

  5. Those Thanksgiving luminaries are wonderful. Odd -- I never make cut outs except at Christmas and they really ARE the best cookies!
